Water Buffalo Milk Mozzarella in a Carriage Episode #6
Makes 8 Sandwiches


16 slices white bread, crust removed
8 slices buffalo mozzarella
4 eggs, beaten
all purpose flour for dredging the sandwiches
½ cup or 125 ml. milk
oil for frying
salt and pepper


1. Heat oil at 350º.

2. In a bowl add milk, eggs and a pinch of salt and pepper. Beat the
ingredients well.

3. Place a slice of mozzarella between two slices of bread. Dredge
In flour and then into egg mixture.

4. Fry until both sides are a golden in colour.

5. Serve hot.
