Ingredients for Mascarpone cream

4 egg yolks
2 egg whites
½ cup/___gr. sugar
1 oz./ 30 ml. rum, optional
1 Lb. / 454 gr. mascarpone
–Italian, room temp.
1 Teaspoon lemon juice
36 savoiardi or Lay Fingers
12 strawberries
2 teaspoons instant coffee

Method or Mascarpone Cream

1. In a bowl combine the egg yolks, sugar and rum, using a hand mixer beat until
well blended and fluffy. Fold in Mascarpone.

2. In a separate bowl add a pinch of salt and ½ teaspoon of lemon juice. Beat the egg whites
until stiff picks form, then fold in with mascarpone mixture and serve with strawberries.

Method for serving:

3. Divide the cream amongst martini glasses or fruit nappies and place 3 savoiardi per glass.

4. Decorate with strawberries and sprinkle with some instant coffee.
