Sarde Ripiene al Forno
Serves 4

Ingredients:

600 gr. sardines
1 sprig parsley
1 sprig rosemary
1 clove garlic
3 Tbsp. breadcrumbs
3 Tbsp. pecorino cheese
3 Tbsp. extra virgin olive oil
salt and pepper

Method:

1. Wash the sardines and remove the head. Open them on the belly, and gut them, removing the bone.

2. Dry them well and place them on a plate. Rinse the parsley and chop it with the rosemary
Leaves and garlic clove.

3. Mix the herbs with the breadcrumbs and the pecorino cheese. Add salt and pepper and
2 tablespoons of oil, mixing well all the ingredients.

4. Stuff the sardines with the mixture, closing them well.

5. Grease a pan and place the fish on top, salt lightly and season with a tablespoon of oil.

6. Cook in a hot oven for 20 minutes, and serve.
