Filetti di Merluzzo al Forno con Pinoli (Veneto)

(Oven Baked Whiting Filet with Pine Nuts)

Serves: 4


675 gr. or 1.5 Lb. fresh whiting; boneless

¼ + ¼ cup or 130 ml. EVOO

85 gr. or 3 oz. dry bread crumbs

30gr. or 1 oz. pine nuts

1 clove garlic, minced

3 sprigs thyme; stem removed

salt and pepper

Method: Preheat oven at 375 ° F

1. Place whiting filet in a bowl and season with salt and pepper. Add ¼ cup of

EVOO, minced garlic and mix well.

2. In a separate bowl, combine the bread crumbs, pine nuts, thyme, salt, pepper

and the EVOO, mix all ingredients well.

3. Dredge the filet in the bread mixture and place in a pyrex. When all filets

have been breaded, sprinkle with left over bread crumbs and drizzle with some


4. Bake in oven for 15-20 minutes until golden in color. Remove from oven.

This dish is served best with Salad.
