Varieta D’Insalate Con Mele, Noci Speziate e Frico

(Mixed Salad Greens with Apples, Spiced Walnuts & Frico)

Serves 6

Ingredients for Salad: Ingredients: for Dressing:

6 oz. or 180 gr. mixed salad 1 Tbsp. shallots, finely chopped

ie: spring mix, Frise, ¼ cup or 62.5 ml. apple cidar vinegar

romaine- white only ½ Teaspoon dry mustard

2 Granny Smith apples, cored and sliced ½ Teaspoon honey

3 white ribs celery, washed and sliced ¾ cup or 185 ml. extra virgin olive oil

thin on a diagonal salt and pepper

6 frico see recipe attached

Ingredients for spiced Nuts:

1 cup or 85 gr. walnut halves Pinch of black pepper

1 Tbsp. or 15 ml. extra virgin olive oil Pinch of ground cinnamon

1 Teaspoon salt 1/8 Teaspoon of ground allspice

1 Tbsp. sugar pinch of cayenne pepper

Method: Preheat oven at 375°

1. In a bowl toss the walnuts with olive oil, then add remaining ingredients. Place walnuts

on a baking dish lined with parchment paper in an even layer. Toast for 10-12 minutes

shaking tray frequently. “Prepare frico as per recipe attached.”

2 Method for dressing: In a bowl, combine shallots and apple cidar vinegar. Let rest for 15 to 20 minutes, then add the dry mustard and honey. Begin to add the olive oil and wisk

to emulsify. Add salt and pepper to taste.

3. Method for Salad: In a bowl, combine the apples and 3 tablespoons of dressing, toss well to coat the apples. Divide the salad and the apples on 6 plates. Drizzle with dressing and walnuts and decorate with frico
