Asparagi Grigliati al Cortaccio

(Asparagus Grilled on Aluminum Foil)

Serves 4


20 asparagus spears, trimmed and washed

4 pcs. aluminum foil, each 8” x 8”

4 Tbsp. EVOO

Pinch fresh oregano, chopped

Pinch fresh thyme

salt and pepper

4 Teaspoons butter


1. Place five asparagus’s on each sheet of aluminum foil.

2. Place one spoon of EVOO on top, then oregano or thyme or a combination of the two, add

salt and pepper.

3. Fold the aluminum foil over and at ends to form an “envelope”, then seal the boarders so the

steam released while grilling remains confined.

4. Place on barbeque and grill for 15 minutes.

5. Remove from grill, open foil and add 1 teaspoon of butter before serving.

EVOO = Extra Virgin Olive Oil
