Veggie Table - Show #46

Paneer Matar

  • 1 cup (230 g) -- Frozen peas, defrosted
  • ½ cup (115 g) -- Paneer, cubed (from Indian grocery store)
  • ¼ cup (60 g) -- Onions, sliced
  • ¼ cup (60 g) -- Ghee/veg oil
  • 2 tbsp (30 g) -- Ginger, finely chopped
  • 5 tbsp (40 mL) -- Boiling water
  • 1 tbsp (15 mL) -- Green onion (green portion only) finely cut
  • 1 tbsp (15 mL) -- Fresh coriander, copped
  • 1 ½ tsp (7 mL) -- Salt
  • ½ tsp (2 mL) -- Red pepper
  • ½ tsp (2 mL) -- Garam masala

Heat ghee and fry onions until soft. Add crumbled paneer, ginger, green chilies and green onion. Cook on medium heat until paneer is lightly coloured. Add peas, garam masala and cook another few minutes until peas are completely heated through and ware has evaporated. Garnish with coriander and serve immediately.
