Zucchini Quesdillas
- 2 tbsp (25 mL) -- Olive oil
- 4 -- Scallions, chopped
- 1 -- Medium zucchini, shredded
- 2 -- Medium tomatoes, seeded and diced
- ½ tsp (2 mL) -- Dried oregano
- ¼ tsp (1 mL) -- pepper
- ½ tsp (2 mL) -- Salt
- 1 -- Packet of tortillas (7")
- 1 cup (250 mL) -- Monterey Jack cheese, shredded
- ¼ cup (50 mL) -- Sour cream
Preheat oven to 400 degrees.. In a medium frying pan, heat olive oil over medium heat and cook scallions, stirring occasionally, until soft (about 2 to 3 minutes). Add zucchini, diced tomatoes, oregano, pepper and salt. Cook, stirring until most of the liquid evaporates, about 2 to 3 minutes. Remove from heat. Place tortillas in a single layer on two large baking sheets (foil). Top each tortilla with equal amounts of cooked vegetable and shredded cheese. Bake until cheese melts (3 to 4 minutes). Serve immediately with a dollop of sour cream on top.
