Mezban: Tomato Chutney & Coucous

  • 1 tbsp (15mL) -- Mezban Tomato Chutney
  • 1 cup (250mL) -- Couscous
  • 1 cup (250mL) -- Boiling water
  • Handful Fresh parsley, chopped
  • 3 ½ oz (100g) -- Feta cheese

Boil 1 cup of water - while boiling add 1 cup couscous. Turn off heat and cover. Just before all the water is absorbed into the couscous, add Mezban Tomato chutney - 1 tbsp or to taste. Add fresh chopped parsley and crumbled feta (You can prepare without feta & parsley.)

Mezban: Tomato Chutney Pasta Sauce

  • 1 Jar of Mezban Tomato Chutney
  • ½ - 1 lb (500g-1kg) -- Tofu
  • ½ cup (125mL) -- Diced onion
  • 1 -2 Cloves garlic, optional
  • To taste… Oil

In a saucepan with enough oil to cover the bottom, brown onion, garlic and then tofu. Mix jar of Mezban Tomato chutney with 1-2 jars of water, stir and add to onion/tofu in saucepan. Simmer to desired consistency. Enjoy with choice of pasta and salad.
