Veggie Table - Show #42

Mezban: Vegetable Biryani

  • 1 Jar of Mezban Biryani paste/sauce
  • 1 lb (500g) -- Mixed veggies: eg., carrots, green beans, potatoes, eggplant, and/or choice of seasonal available, all cut into equal pieces
  • ¼ cup (60mL) -- Oil/ghee
  • 6 0z (175g) -- Plain yogurt or sour cream
  • 2 cups (500mL) -- Basmati rice, well rinsed
  • 4 cups (1L) -- water

Cook basmati rice in 4 cups of water with a pinch of salt. While rice is cooking, sauté veggies in oil/ghee about 2-3 minutes. Mix the jar of Mezban Biryani sauce with veggies. Add yogurt or sour cream. Cook on medium low heat until desired tenderness. Mix gently with cooked basmati rice.
