Veggie Table - Show #40

Fiery Yam Fritters

  • 1 lb 500g Yam, peeled and chopped
  • 2 tsp 10Ml Mustard oil
  • Five Fresh hot chilies, chopped
  • Six Garlic cloves, minced
  • 1 1/2 tbsp 22mL Cumin seeds
  • 1/2tsp 2mL Asafetida
  • Pinch… Sea salt
  • One Egg, beaten
  • As required… Oil for fryling

Cook yam pieces in boiling water for 20-30 minutes, then drain and mash. Heat mustard oil in pan, cook chilies, garlic, mustard seeds and cumin seeds until chilies and garlic are browned. Sprinkle in asafetida. Add to mashed yam, add salt to taste and mix thoroughly with beaten egg. Shape into small pieces and fry in hot oil until browned on both sides. Serve with chutney. Excellent with green salad.
