Stuffed Green Chilies
- 15 (Fifteen) -- Green chilies
- 2 tbsp (25 mL) -- Red chili powder
- 1 tbsp (15 mL) -- Salt
- ½ tsp (2 mL) -- Turmeric
- 4 tsp (20 mL) -- Ground coriander
- 2 tsp (10 mL) -- Lemon juice
- 2 tsp (10 mL) -- Mango powder (amchur)
- 1 ½ tsp (7 mL) -- Cumin
- 2 tsp (10 mL) -- Aniseed (fennel)
- 2 tsp (10 mL) -- Mustard seed powder (rai)
- 1 cup (250 mL) -- Vegetable/canola oil
Wash and slit the chilies - then seed. Mix all the spices and stuff into chilies. Heat oil in a shallow pan. Put the chilies in a when a drop of water sputters when flicked in. Reduce to low, cover, and simmer for 10 minutes. Turn carefully, cover and cook for another 10 minutes. Remove from stove and serve hot with yogurt (to cool) and chapatis.
