Veggie Table - Show #33

Spanakopita

  • One package -- Very thin "filo" pastry
  • 2 lbs (1 kg) -- Feta Cheese
  • 2 lbs (1 kg) -- Spinach, frozen or fresh
  • ½ lb (250 g) -- Butter or margarine
  • 3 cloves (or to taste) -- Garlic or garlic powder

If spinach is raw, cook and slice thinly. If frozen, defrost. In either case make a mixture of feta cheese (crumbled) and spinach. Add garlic - chopped. Spread some butter in baking dish. Open the filo package (keep moist by wrapping in a moist towel), place each layer (it is very thin and fragile) on the dish, buttering each one with a brush. After you have done 8 slices, spread spinach/feta mixture over the entire dish, covering the pastry. Cover with 8 more slices, buttering each as before. Notch the last one, creating 2" squares. Place in oven heated at 350 degrees and cook until the top is brown.
