Veggie Table - Show #27

Plaintain Curry

  • 2 lbs (1 kg) -- Plantains, peeled and sliced crosswise (1/4" thickness)
  • 2 tbsp (25 mL) -- Vegetable/canola oil
  • 2 tbsp (25 mL) -- Curry powder
  • ¼ cup (50 mL) -- Water
  • 1 -- Medium onion, sliced
  • 3 -- Cloves of garlic, finely diced or crushed
  • 2 cups (200 g) -- Coconut milk
  • To taste... -- Salt and fresh hot pepper

Heat oil and sauté curry powder mixed with ¼ cup water. Add onion and garlic and cook for five minutes. Add the sliced plantains and cook another five minutes. Pour in the coconut milk. Add salt and pepper to taste, lower heat and cook until tender. Serve with rice or roti.
