Green Mango Chutney

  • 4-5 -- Green mangoes (preferably raw) washed & sliced
  • 1 tbsp (15 mL) -- Curry powder
  • 1 cup (100 g) -- Water (divided)
  • ½ tbsp (7 mL) -- Garam masala
  • 2 tbsp (25 mL) -- Veg/canola oil
  • 3 -- Cloves of garlic, crushed or finely diced
  • ½ tsp (2 mL) -- Hot pepper (optional)
  • To taste... -- Salt and fresh pepper

Mix curry powder in ½ cup of water to form a thinnish paste. Heat 1 tbsp of oil in a heavy saucepan. Add curry paste and garam masala. Cook constantly over low heat until the oil separates. Add mango slices and coat with the paste. Add the garlic, stir 30 seconds and add another ½ cup water, plus the salt, black pepper (and if using, hot pepper). Cook until the mango is tender serve as a condiment or side dish. HINT: if the mangoes are very green, add 1 tsp (5 mL) sugar while cooking.
