Veggie Pizza (Indian twist!)
- 1 -- Large pre-prepared uncooked thin pizza crust
- ½ tbsp (7 mL) -- Olive oil
- 2 cups (500 mL) -- Shredded mozzarella cheese
SAUCE:
- 1 -- Onion, chopped
- 1 ½ tbsp (22 mL) -- Olive oil
- 7 (Seven) -- Large tomatoes, chopped
- 1 -- Large clove of garlic, chopped
- 10 (Ten) -- Fresh mint leaves, chopped
- 1 - 2" (1 - 5cm) -- Stick of cinnamon
- 5 (Five) -- Whole cloves
- 2 tsp (10 mL) -- Red chili powder
- ½ tsp (2 mL) -- Mixture of powdered coriander and cumin
- To taste... -- Salt
SUGGESTED TOPPINGS:
- 1 -- Large green pepper, seeded and sliced into thin rounds
- 1 (One ) -- Small onion, sliced
- 2 -- Jalapenos, sliced into rounds
Preheat oven to 400F. Brush ½ tbsp olive oil on the crust and set aside. Heat the remaining olive oil and add garlic, onion, cinnamon and cloves. When the garlic starts to brown, add mint leaves and fry for another two minutes. Add tomatoes and fry about ten minutes. Now add the cumin, coriander and chili powders, and salt to taste. Fry about 30 seconds and take off the stove and cool. Blend into a paste or buy bottled paste and modify with onion, cinnamon, cloves and powders (cumin, coriander and chili). Spread paste over crust and sprinkle with mozzarella. Cover with toppings and bake until crust is crisp and cheese melts.
