Harvest Mushroom Casserole
- 1 ½ lbs (750 g) -- Mushrooms, sliced
- 1 tsp (4 mL) -- Garlic, minced
- 3 -- Scallions, chopped
- 2 tbsp (25 mL) -- Butter
- 1 - 16 oz can (454 mL) -- Natural mushroom soup
- 2 tbsp (25 mL) -- Parsley
- ¾ cup (175 mL) -- Whole wheat bread crumbs
- 2 tsp (10 mL) -- Beau Monde (French Blend dressing)
Sauté mushrooms, garlic and scallions in the butter over moderate hear for about 10 minutes until softened. Chop parsley. Preheat oven to 350 degrees F. Pour ingredients into casserole and stir in soup, parsley, crumbs and seasoning. Bake 30 minutes in preheated over. Can be served warm or at room temperature. Serves four.
