Thai Pasta Primavera
- 4 - 5 servings -- Cooked pasta
- 2 tbsp (25 mL) -- Oil
- 8 oz (225 g) -- Light coconut milk
- 2 tbsp (25 mL) -- Thai red curry paste
- 3 cups (750 mL) -- Broccoli flowerets
- 2 ½ cups (625 mL) -- Sweet peppers
- 1 ½ cups (375 mL) -- Sliced onions
- To taste... -- Dried red peppers (optional)
Heat oil in a large skillet, stir-fry onions, broccoli, sweet peppers for 5 minutes. Add coconut milk and red curry paste and stir together well. Bring to a boil. Lower heat and simmer for 4 minutes, stirring often. Add pasta and toss together well. Serve hot.
