Veggie Table - Show #11

Vegetable Quiche

  • 3 -- Eggs
  • 2 cups (500 mL) -- Shredded cheddar
  • 1 -- Small onion, diced
  • 3 -- Cloves of garlic
  • 1 -- Yellow pepper
  • 3 -- Medium mushrooms
  • 1 cup (250 mL) -- 2% Milk
  • ½ tsp (2 mL) -- Thyme
  • ½ tsp (2 mL) -- Parsley
  • ½ tsp (2 mL) -- Coriander
  • 2 tbsp (25 mL) -- Parmesan cheese

First cream the eggs with a hand or electric blender. Add shredded cheddar and mix well. In a pan, sauté onions and garlic until onions are soft. Add mushrooms and yellow pepper to the onion and garlic mixture. Preheat oven to 350 degrees. Now add the milk to the egg mixture, stir in the thyme, parsley and coriander. Mix in the onion, etc. mixture and pour into a baking dish. Sprinkle the top with the parmesan cheese and bake until cheese is melted and brown. To check if done, insert a toothpick - it should come out clean.
