Veggie Table - Show #7

Palak Paneer

  • 1 tbsp (15 mL) -- Flour
  • 2 tsp (10 mL) -- Minced ginger
  • 1 tbsp (15 mL) -- Minced garlic
  • 1 -- Onion, chopped
  • 4 -- Green hot chilies
  • 2 tbsp (25 mL) -- Pureed tomatoes
  • 1 (250 g) -- Package of paneer
  • 4 cups (1 L) -- Spinach, washed and stemmed

Slice paneer into ½ inch cubes and set aside for frying. In a large pot add all ingredients except flour and cook well in one cup of water (about 20 minutes). While this is cooking, fry the paneer lightly in about ½ inch of oil in a frying pan. Put spinach mixture in a food processor and chop until blended. Reheat, add flour and paneer, cook gently about 5 minutes.
