Veggie Table - Show #6

Masala Chanas

  • 2 tsp (10 mL) -- Pomegranate seeds
  • 2 tsp (10 mL) -- Amchur (mango powder)
  • 2 tsp (10 mL) -- Garam masala
  • ½ tsp (2 mL) -- Paprika
  • 2 tsp (10 mL) -- Minced ginger
  • ½ cup (125 mL) -- Water
  • 1/3 cup (75 mL) -- Vegetable oil
  • 2 ½ tsp (12 mL) -- Minced garlic
  • 3 -- Onions, finely chopped
  • 2 -- Fresh hot green chilies, sliced
  • 2 x 19 oz (950 g) -- Tins of chickpeas

Heat the oil and fry onions and garlic until brown. Add paprika and stir. Add the water and fry gently until evaporated and almost dry. Add chickpeas, ginger, chilies, garam masala, pomegranate seeds and amchur. Fry, stirring constantly, for about 8-10 minutes. Reduce heat and simmer another 5-10 minutes.
