Veggie Table - Show #5

Vegetable Lemon Pillau

  • 1 cup (250 mL) -- Frozen peas, defrosted
  • 2 -- Carrots, diced
  • 1 -- Small onion
  • 1-2 -- Bay leaves
  • 1 -- Stick of cinnamon
  • 2 -- Pods of cardamom
  • ¼ tsp (1 mL) -- Turmeric
  • 1 tsp (5 mL) -- Salt
  • 1 tsp (5 mL) -- Black or regular cumin seeds
  • 1 ½ cups (375 mL) -- Basmati rice, washed
  • 3 cups (750 mL) -- Water
  • ¼ cup (50 mL) -- Lemon juice
  • 2 tbsp (25 mL) -- Vegetable oil or butter

Heat oil or butter until water sprinkled on it sputters, add the bay leaves, cinnamon and cardamom and cook until cardamom pod opens, then add cumin seeds - stirring all the while (about 15 - 30 seconds). Add onion and cook until deep golden. Add the rice and fry until translucent. Add turmeric, salt and carrots, cook stirring for about a minute or two. Add peas, water and lemon and cook until done. Mix well before serving.
