Veggie Table - Show #5

Green Peppers & Potato Subzi (Curry)

  • ½ -- Green pepper, seeded and sliced lengthwise
  • 4-5 -- Potatoes
  • 2 tsp (10 mL) -- Ground cumin
  • ¼ cup (50 mL) -- Vegetable oil
  • ½ tsp (2 mL) -- Turmeric (optional)
  • ½ tsp (2 mL) -- Red pepper (optional)
  • To taste... -- Salt and fresh pepper

Heat oil on medium about one to minutes, add ground cumin, red pepper and turmeric if using. Cook, stirring, about one minute and then add the potatoes and salt. Mix to cover potatoes with cumin, turn the heat down a little and cook until half done (about five minutes). Add the green peppers, stir again and cook until potatoes are completely cooked by not over-done - mixing frequently to prevent sticking. Garnish with coriander.
