Ingredients:
- 80z – Chicken breast
- Salt and pepper to taste
- 1tbsp – Olive oil
- 1 – Gala apple
- 1tbsp – Chicken stock
- 2tbsp – Maple syrup
- 2tbsp – Unsalted butter
- 1small - Sweet potato
Method:
Season both sides of the chicken breast with salt and pepper.
Place a skillet on medium to high heat, to get hot. Place some olive oil in the pan and then add the chicken skin side down. Place in an oven at 375 degrees for about 18 minutes until done. Turn chicken over in the last 5 minutes of cooking.
Bake the potato in the oven, skin on and wrapped in foil. When the potato is cooked, (give slightly under finger pressure) remove from the foil and peel away skin.
Cut into cubes and place in a food processor. Add 11/2tsp of butter, season with salt and pepper. Puree mixture until smooth.
Core apple and cut into 6 pieces. In a pan add the apple, chicken stock and maple syrup.
Heat and reduce sauce to glazed apple segments. Stir in 1tsp of butter and remove from heat.
