Raspberries Chevre Snow Balls

Ingredients:
- 2 140 gm packages of goat cheese
- 2 ounces of fresh raspberries
- toasted, sliced almonds, enough to coat balls, about 1/2 cup
Method
In mixer, beat chevre with raspberries until blended, but don’t overbeat, leave some raspberry chunks. Let the mixture chill in the fridge before rolling into balls with your hands. Then, roll and pat the balls into the almonds. Keep cold until serving. Makes about a dozen or more depending on the size you roll them.
