MUSHROOMS AND TOFU
- Dried mushrooms
- Fresh mushrooms such as shitake
- Organic tofu
- Onion
- Turkey
- Quinoa
- Okra
- Tomatoes
- Soy sauce
- Parsley
- Salt & pepper
Pour boiling water over the dried mushrooms. Once they are no longer firm, cut them up.
In a pan, heat up oil and add the onions, mushrooms and 2 tablespoons of soy sauce. After about three minutes, add the remaining ingredients, including dried mushrooms with the water they have been soaking in. Finish the sauce by pouring in a tad of cream. Cook the quinoa on low heat using the same amount of water as quinoe. Just before the quinoa is ready, add finely chopped parsley. Combine the quinoa with the sauce and it's ready to serve. Smacznego!
