TACO SALAD
- 1/2 shredded lettuce
- 3 chopped tomatoes
- 1 chopped red onion
- 2 pounds minced turkey
- 3/4 cup shredded cheddar cheese
- 1 can of red kidney beans
- 2 avocados
- 1 tbsp sour cream
- 1 tbsp of lemon juice
- 1/4 cup of water
- Chili flakes
- Salt & pepper
Start by frying without oil the turkey meat in a non-stick pan together with ¾ of the red onion. Add 2 tsp of chili flakes. While the meat is cooking, scoop out the flesh of two avocados and place in a blender. Add the cream, the remaining ¼ onion, the lime juice and the water. Blend until you get a smooth cream and set aside.
Finish cooking the meat. Drain the liquid, add salt & pepper to taste and mix well. In a deep glass bowl pour the following ingredients in the following order, creating one layer at a time. Start by adding the tomatoes, then add the lettuce, then add the turkey meat, most of the cheddar cheese (set some aside for the last layer), then the can of beans and finally pour the avocado mix on top of everything. Finalize with the remaining shredded cheese. Serve with corn tortilla chips and enjoy! Smacznego!
