OMNI SWEET CABBAGE & AVOCADO APPETIZER

  • 1 large jar of sauerkraut cabbage
  • ½ cup of wild mushrooms
  • 1 ½ tbsp olive oil
  • ½ cup plum marmalade
  • ¼ cup honey
  • ¼ cup red wine
  • 1 avocado
  • 2 tbsp mayonnaise
  • ½ tbsp mustard
  • 1 can of chunk tuna in water
  • Juice of ½ a lime
  • Salt & pepper

Start by draining the sauerkraut and rinsing with water through a strainer to remove most of the vinegar. Grab handfuls of the sauerkraut and chop into small pieces and set aside. In a large pan, pour the olive oil and once it is warm add the sauerkraut and cook at low heat.

In a separate pot, soften the wild mushrooms with ½ cup of warm water. Once the water has gained some colour, remove the mushrooms and pour the water over the sauerkraut. Chop the mushrooms and add to the sauerkraut. Mix everything together. Then add the marmalade, the honey and the red wine. Mix well all the ingredients and let it cook and simmer for a few minutes.

In the mean time, cut the avocado in half and remove the pit. Set aside both halves. Open one can of tuna and in a bowl combine with the mayonnaise, mustard and lime juice. Add salt & pepper to taste. Fill each half of the avocado with 2 to 3 spoonfuls of the tuna mix.

Serve each avocado with some of the sweet cabbage on the side and enjoy! Smacznego!
