APPLE PANCAKES
- 5 Macintosh apples
- 2 eggs (separate yolks and whites)
- 4 tbsp sugar
- 1 cup flour
- 1 cup milk
- Pinch of salt
- 1 tbsp Crisco shortening
In a large bowl, beat the egg whites with 2 tbsp of sugar using a hand mixer until they become fluffy. Set aside. In another bowl, beat together the egg yolks and the remaining 2 tbsp of sugar. Add the milk and once it is mixed together with the other ingredients, add the flour and the pinch of salt. Continue mixing together until all the ingredients have incorporated. Fold in the egg white mix until you obtain an even batter.
Peel and core the apples and slice them horizontally, about ¼ inch thick so you get several nice round slices. In a large frying pan add the tbsp of Crisco and let it melt. Once it is hot, dip the apple slices in the batter and fry for a couple of minutes on each side or until golden brown. Serve in a plate and sprinkle with icing sugar. Add your favourite syrup or marmalade and enjoy. Smacznego!
