OMNI CALAMARI & MAITAKE MUSHROOMS APPETIZER

  • 1 ½ calamari
  • 1 ½ cups maitake mushrooms (sliced)
  • ½ cup olives
  • 2 tbsp hot pepper oil
  • ¼ cup white wine
  • 1 tbsp olive oil
  • Fresh dill
  • Fresh oregano
  • Fresh rosemary (a few stems)
  • ¼ cup milk
  • 2 tbsp pine nuts
  • 4 cups mixed greens
  • Salt, Pepper

Remove the rosemary leaves from the stems and set aside. Rinse well the calamari under cold running water and pat dry with a paper towel. Warm up an electric grill and place the calamari letting it cook for a few minutes.

In the mean time, add the olive oil to a large wok and add the rosemary leaves, the dill and the pine nuts; sauté everything for 1 or 2 minutes. Add the mushrooms, the olives, hot pepper oil, the white wine and the oregano. Mix well and cook for a couple of minutes. Add the grilled calamari, some more wine if needed, then salt & pepper to taste. Mix all the ingredients together, let them cook for a couple of minutes more and then add the milk. Finalize by adding the greens and mixing everything together. Let the mixed greens cook until soft and tender. Serve and enjoy. Smacznego!
