QUINOA SALAD
It's a gluten free salad!
- 1 Cup of Quinoa
- 2 Cups of Water
- Salt
- 12 Dried Apricots chopped
- 2 Shallots chopped
- 1 Yellow or green pepper chopped
- ¼ cup pine nuts
The Vinaigrette
- Grated zest of ½ lemon
- Juice of ½ lemon
- Fresh cilantro chopped
- 1 Tsp Paprika
- 1 Tsp Ground cumin
- ½ Ground coriander
- Salt & pepper
- Olive oil
Cook the Quinoa with 2 cups of water and set aside. Chop the pepper, shallots and apricots and set aside. In a large bowl, combine the lemon zest, lemon juice and 1 tbsp of olive oil. Add the shallots, fresh cilantro and pepper and mix well. Add all of the cooked quinoa and 1 more tbsp of olive oil. Add the paprika, cumin, coriander, salt & pepper to taste, the pine nuts and mix everything together. Transfer to a salad bowl and decorate with slices of tomato, lemon, pine nuts and fresh cilantro. Serve with bread sticks and sesame seed crackers. Smacznego!
