MOCHA CREAM AND SALADS
Mocha Cream
- 1 tbsp cocoa powder
- 2 tbsp espresso coffee
- ¼ cup liquid sweet
- 1 tbsp vanilla extract
- 1 cup whipping cream
Salad with figs
- 1 tbsp butter
- Arugula leaves
- Gorgonzola cheese
- 4 Figs
- Prosciutto
Salad with pears
- Mixed greens
- 3 Pears
- Chopped walnuts
- Blue cheese
- Chopped celery
- Olive oil
- Lime Juice
- Garlic clove
- Herbs
To prepare mocha cream:
Mix together the cocoa powder, espresso and liquid sweet. Pour the whipping cream in a large bowl and add the cocoa-coffee mix. Add the vanilla extract. Mix everything well using a hand mixer, until the cream is fluffy. Add more cocoa powder if you like a stronger chocolate flavour. Pour in a tall dessert cup and chill in the fridge.
To prepare salad with figs:
In a large sauce pan melt the butter over low to medium heat. Cut the figs in half and place in the sauce pan with the flesh facing down. Leave for a couple of minutes and then remove. Cut a slice of gorgonzola cheese and cover the flesh of the fig. Wrap both with a slice of prosciutto and place over a bed of Arugula leaves. Repeat the process with all the figs.
To prepare salad with pears:
Mix in equal parts lime juice and olive oil. Squeeze one or two garlic cloves and add some herbs. Mix well and set the dressing aside. Slice the pears. Pour some of the dressing over a bed of mixed greens. Add the pear slices, some prosciutto slices, blue cheese and celery. Pour some more dressing if needed.
Serve the salads and the mocha cream and enjoy! Smacznego!
