CHICKEN CORN SOUP
- 2 tbsp corn oil
- 1 tbsp butter
- 1 small onion chopped
- 1 chicken leg quarter cut in small pieces
- 1 tbsp flour
- 1 cube chicken bouillon
- ½ red, yellow & orange peppers sliced
- 2 large tomatoes peeled
- 1 ¼ cups corn
- Oregano
- Salt & pepper
- Parsley
- 2 cups of water
To prepare the soup:
Heat the oil and butter in a deep pot. Add the chopped onions and the chicken pieces. Fry for a few minutes. Mix the flour with the 2 cups of water and pour into the pot. Let it simmer for a few minutes. Chop the tomatoes and add them to the soup. Add the peppers, the corn and the chicken bouillon cube. Add oregano, salt and pepper to taste. Let it simmer for 20 minutes. Serve and decorate with fresh parsley. Enjoy! Smacznego!
