OMNI CHICKEN IN ALMONDS

  • 4-5 chicken breasts without bone
  • 1 egg
  • Salt
  • Cracked pepper
  • 1 cup shredded almonds
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1/2 tsp of sugar
  • Slices of pineapple
  • Vegetable oil


To prepare the chicken:

Add salt and cracked pepper to each chicken breast. Beat the egg. Toss each of the chicken breasts in the egg and then toss them in the shredded almonds. Make sure the whole breast is covered with almonds as much as possible. Add oil to a large pan and fry the chicken breasts over medium heat.

Mix the mayonnaise, the Dijon mustard, a pinch of salt and the sugar. Set aside.

Once the breasts are cooked, place on a dish and cover each one with a slice of pineapple. Add a tsp of the mayo mix right on the centre of the pineapple. Decorate with fresh grapes and some fresh dill. Serve and enjoy. Smacznego!
