CHEESECAKE WITH AMARETTO
- 2 Cream cheese bricks (8 oz)
- ˝ cup of bitter chocolate
- ˝ cup sugar
- 3 eggs
- 1 tsp vanilla
- 1 tsp Amaretto
- ˝ small brick of butter (125 grams)
- Ginger cookies (1 box)
Start by crushing the cookies into crumbs. Transfer to a deep bowl. Melt the butter in a sauce pan and pour over the crumbs. Mix everything very well. Use this crust to cover the bottom of a cheesecake pan. Set aside.
In a large bowl add the cream cheese, the 3 eggs, the sugar, the Amaretto and the vanilla. In the mean time, in a separate sauce pan melt the chocolate making sure it doesn’t burn. While the chocolate melts, blend all the other ingredients with an electric mixer. Then pour the melted chocolate and continue mixing until all the ingredients form a uniform filling. Pour the mix over the crumbs and extend with a spatula until the cheesecake pan is covered evenly. Bake in a preheated oven at 325 degrees for about 40 minutes, or until the centre is almost set. Let the cheesecake cool down. You can place in the fridge for a few hours before cutting it. Remove from the pan and decorate with fresh raspberries. Serve and enjoy! Smacznego!
