SPINACH KISCH TARTS WITH SALAD
Kisch
- 1 pkg. of spinach cooked and chopped
- 2 small onions, chopped
- 2 garlic cloves
- 3 to 4 mushrooms chopped
- 1 egg
- ½ cup feta cheese
- ¼ cup blue cheese
- Edam cheese
- Salt & pepper to taste
- Small tart shells
Salad
- Mixed baby greens
- 3 to 4 plum tomatoes
- Chopped walnuts
- Fresh raspberries and blueberries
- 1 tbsp olive oil
- 2 to 3 tbsp of fig balsamic vinegar
To prepare the Kisch::
Sautee the onions, garlic and mushrooms together and set aside. In a large bowl mix the spinach with the feta and the blue cheese. Add the sautéed onions & mushrooms. Add 1 egg, salt & pepper and mix everything well. Shred some Edam cheese on top of the mix and combine all the ingredients once more.
Fill each tart shell with a generous scoop of this mix and place on a rack. Bake in a pre-heated oven at 360 degrees for 30 minutes or until golden brown. Remove and let cool down.
To Prepare the salad:
Cut the plum tomatoes in quarters. Add to a salad bowl together with the baby greens. Add the raspberries and blueberries. Pour the olive oil and the vinegar and toss all the ingredients. Finish with the chopped walnuts.
Serve one or two of the tarts together with the salad and enjoy! Smacznego!
