LAMB
- Lamb 1kg
- Fresh tarragon
- Fresh basil
- Fresh rosemary
- Dijon mustard
- Baby broccoli
- 2 yams
- 1 celery root
- 1 tbsp butter
- Olive oil
- Pesto with oil
- Salt & pepper
To prepare the lamb:
In a large deep pot or wok add olive oil, fresh rosemary, tarragon and basil. Over medium to high heat fry the lamb until the outside looks brown. Remove from the pot and place in a roaster covering with a lid. Cook in the oven for about 15 minutes at 375 degrees. Remove and baste all of the lamb with Dijon mustard. Place again in the oven and finish cooking for another 10 minutes.
To prepare the mashed yams & the broccoli:
Cook the yams and the celery root in boiling water until they become soft. Drain all the water and mash the yams and the celery root together adding a tablespoon of butter. Once everything is mashed thoroughly, add salt & pepper to taste.
Cut the baby broccoli in small pieces and steam until it is cooked.
Serve the lamb with the mashed yams and the broccoli. Decorate with a swirl of pesto and olive oil. Enjoy! Smacznego!
