GRILLED SALMON WITH POMEGRANATE SALAD
Salmon
- 2 Salmon fillets
- 10 to 12 asparagus
- 1 Lemon
- Spices (lemon with pepper)
Salad Pomegranate
- Mixed greens
- A bunch of spinach
- 3 tbsp pomegranate (seeds)
- 1 Avocado
- 4 Baby tomatoes
- 2 tbsp sunflower seeds
- 1 tbsp olive oil
- Salt & pepper to taste
To prepare the salmon:
Squeeze the juice of half a lemon per each salmon fillet. Sprinkle with spices and place on the grill. Cook each side for about 7 minutes.
To cook the asparagus, remove the ends with your hands and place in the grill next to the fillet. Cook until they become tender and their color is a lighter bright green.
To Prepare the salad:
In a large bowl, combine the mixed greens with a bunch of pre-washed and cleaned spinach. Add 3 tbsp of pomegranate seeds and 2 tbsp of sunflower seeds. Peel the avocado, cut it into cubes and add to the salad. As an option you can cut some baby tomatoes and add them as well. Add the olive oil and salt & pepper to taste. Toss all the ingredients together and serve.
Serve a salmon fillet with the asparagus and accompany with the salad. Enjoy! Smacznego!
