OMNI SALMON WITH RICE AND VEGETABLES

  • 1 salmon steak
  • ½ cup of Teriyaki marinade
  • Herbs to taste
  • 1 cup of whole grain brown rice
  • 2 tbsp of red rice,
  • 2 tbsp of wild rice
  • 2 tbsp of sweet rice
  • Chopped dill
  • Chopped parsley
  • ¼ cup dried cranberries
  • 1 or 2 small Bok Chois

To prepare the salmon:

Marinate over night the salmon steak in the teriyaki marinade together with some herbs. Bake at 350 degrees for 35 minutes.

To prepare the rice:

Mix the whole grain brown rice, the red rice, the wild rice and the sweet rice (all available in a health food or organic stores). Cook with 2 cups of water or broth for about 1 hour over low to medium heat. 5 minutes before it is completely cooked add the chopped dill, chopped parsley, the dried cranberries and spices to taste. Finish cooking and let it stand for 10 min.

To prepare the vegetables:

Remove the outer leaves of the Bok Choi and put in boiling water. Let it cook for 2 minutes. Drain well.
In a large plate serve the salmon, a portion of rice and some Bok Choi.
