OMNI FRIED RICE

  • 2 tbsp of margarine or vegetable oil
  • 1 chopped onion
  • 400grams of instant rice
  • ½ kg fried bacon
  • 1 kg chopped mushrooms
  • 1 bunch of chopped parsley
  • 250 ml of cream
  • Salt & pepper to taste
  • 2 tbsp of vegetable seasoning powder

To prepare:

In a large and deep pot, melt the margarine. Add the chopped onions and fry until it becomes soft. Add the kilo of mushrooms, salt & pepper to taste and cook for a few minutes until the mushrooms become softer. Add the ¾ of the cream and cook for a couple of minutes. Add the chopped parsley and the rest of the cream. Cook for a couple of minutes more and let it simmer. Set aside.

Cook the instant rice according to the instructions. Once it is cooked add the seasoning powder and mix very well. Spread one layer of rice in a large rectangular serving dish. Spread some of the bacon and cover with the mushroom sauce. Add a second layer of rice and repeat the process. Serve and enjoy.
