OMNI RADICCHIO SALAD

  • 1 head of radicchio
  • 1 red onion,
  • 1 butternut squash (cooked and peeled)
  • A bunch of green onions
  • Toasted pine nuts
  • 250 grams of feta cheese
  • ½ cup olive oil
  • 1/3 cup red balsamic vinegar
  • Herbs and spices (to taste)

To prepare:

Cut the cooked squash and the feta cheese in cubes and mix in a large salad bowl. Remove the top layer of the radicchio and discard. Cut the radicchio in small pieces and add to the bowl. Slice the red onion and the green onions and add to the salad mix. In a large pan, toast the pine nuts for a couple of minutes, remove and add to the salad. Toss gently all the ingredients. In a large cup, mix the olive oil, the red balsamic vinegar, the spices and herbs. Pour over the salad and mix everything well. Serve and enjoy.
