OMNI CARNIVAL FEAST

Punch

  • ½ Litre of lemon tea
  • ½ bottle of red wine
  • ¼ cup of rum
  • Cinnamon
  • 250grams of brown sugar
  • Lemon juice (2 to 3 lemons)
  • Orange

Jewish herrings

  • 5 pickled herrings
  • 3 red onions chopped
  • 2 white onions chopped
  • 2 cups of raisins
  • 4 to 5 tbsp of tomato paste
  • Salt, pepper,
  • Olive oil
  • Sugar to taste
  • Walnuts

Sweet Zucchini (or Eggplant)

  • 1 large and thick Zucchini (or eggplant)
  • 2 eggs
  • ½ cup of flour
  • ½ cup of bread crumbs
  • Spices,
  • Olive oil

Creamy Sauce

  • 1 cup of natural yogurt
  • 1 cup of dill
  • 3 tbsp mayonnaise
  • 2 tbsp of ketchup
  • Salt, pepper, spices

To prepare the punch:

Boil the tea and the lemon juice together with the cinnamon for 10 minutes. Pour the wine, the sugar and the rum and mix everything well. Pour onto a punch bowl covered with some slices of a fresh orange.

To prepare the herrings:

Cut the herrings in pieces 2 inches wide and set aside. In a large pan, add 2 tbsp of olive oil and fry the chopped onions over medium heat until they become translucent. Add the tomato paste and another tbsp of olive oil and mix well. Cook for another couple of minutes. Sprinkle some chopped walnuts and some raisins. Add more oil if necessary and mix well. Add salt & pepper to taste and sugar if needed. Cook for another few minutes. Pour this sauce over the herrings and decorate with more raisins and walnuts.

To prepare the Zucchini:

Cut the Zucchini in thick slices and sprinkle with your favourite spices. Beat 2 eggs and set aside. In a deep dish combine the flour and the bread crumbs. Add 2 tbsp of olive oil onto a large pan and heat it up. Grab a slice of Zucchini and toss it in the egg mix, then toss it in the flour and then back in the egg mix. Fry both sides in the pan for a couple of minutes or until golden brown. Repeat the same procedure with the other slices. Set aside. (Note: This recipe can also be prepared with eggplant)

To prepare creamy sauce:

Chop finely fresh dill and mix with a cup of natural yogurt. Add the mayonnaise, ketchup and your favourite spices. Add salt & pepper to taste and mix everything well. Pour over the fried Zucchini slices.
