OMNI GOAT CHEESE QUICHE WITH SPINACH

  • 500 grams of soft Goat cheese
  • 250 grams of hard Goat cheese
  • 2 Small containers of Ricotta cheese
  • 30 grams of Gouda and/or Swiss cheese (can have both for a very cheesy quiche)
  • 7 eggs
  • 1 cup chopped parsley
  • 1/4 cup chopped spinach
  • Philo dough
  • Minced garlic (enough for 3 tbsp)
  • Salt
  • Pepper
  • Vegetable oil

Add the soft goat cheese onto a deep bowl. Then add 2 full small containers of Ricotta cheese. In a separate bowl shred the hard goat cheese and then the Swiss and/or Gouda. Mix all the cheeses well. Add 5 eggs, salt & pepper to taste, at least 3 tbsp of minced garlic, the chopped parsley and spinach and mix everything together very well.

Grease a deep baking pan with vegetable oil. Then cover it with a few sheets of Philo dough, just enough to cover the bottom and the sides. Brush these sheets with oil too. With your hand, grab one sheet of dough and scoop out some of the cheese mix. Form a pocket and start covering the pan one pocket at a time until it is full. Then cover everything with two or three large Philo sheets. Beat the remaining 2 eggs and brush the dough with them. Bake in a pre-heated oven at 380 degrees. Once it is ready, let it cool down for a couple of minutes. Cut, serve and enjoy. Smacznego!
