Rabbit Greek Style
- 1 rabbit cut into pieces
- 6 shallots or small onions
- 5 garlic cloves
- 2 cinnamon sticks
- 3 to 4 bay leaves
- 3 cloves
- Salt
- Pepper
- 1/4 cup of olive oil
- 1/2 cup of tomato paste
- 1/2cup of red wine
Note: The same recipe can be prepared utilizing veal instead of rabbit or you can prepare two dishes with different kinds of meat.
In a deep pot pour the olive oil and add the rabbit pieces. Cook for about 15 minutes stirring occasionally. Remove the meat, but keep the olive oil in the pot. Add the shallots, add the meat again and add salt & pepper to taste. Add the garlic cloves on top of the meat. Break the cinnamon sticks in half and add to the meat. Add the bay leaves and cloves. Mix everything well. Pour the red wine on top, then pour the tomato paste and mix well again. Cover the pot with a lid and let it cook for about 30 minutes on low heat. After 30 minutes the mix will be boiling and the meat is ready. Serve and enjoy. Smacznego!
