APPLE-PLUM CAKE

• 2 cups flour
• 3/4 cup sugar
• 3 tbsp butter
• 3 tbsp oil
• 3 tbsp sour cream
• 2 eggs
• Vanilla sugar or icing sugar
• 1/2 tbsp baking powder
• 1kg of apples
• 1/2 kg of plums
• 1cup Almonds
• 1tbsp cinnamon

To prepare the dough:

Sift the flour and the baking powder into a medium bowl and set aside. In a large bowl add the butter and the sugar and mix on medium-high speed with and electric mixer until the butter creams and becomes fluffy. Beat the eggs and add them to the butter and keep mixing. Add half of the flour mixture and 1 tbsp of cream and oil. Mix together, and then add the remaining flour, sour cream and oil. Keep mixing until you obtain uniform dough. Remove from the bowl and separate in two batches of equal size. Knead by hand if necessary. Set aside.

To prepare the cake:

Peel and cut the apples into small wedges. Cut the plums in half and discard the pit. On a clean surface sprinkle some flour and, using a rolling pin, extend half of the dough forming a square or rectangle the size of your baking pan. Cover a baking pan with parchment paper and cover the bottom with this dough. Add the apples, plums, almonds and cinnamon. Expand the remaining dough with a rolling pin and cover the cake. Place in a pre-heated oven at 375 F and bake for 60minutes or until you insert a toothpick and it comes out clean. Sprinkle with the vanilla sugar or icing sugar. Serve and enjoy. Smacznego!
