Pasta with Shrimps & Greek Salad
Cakes for Kids:
- 1 eggplant
- 1 spoon of flour
- 2 eggs
- 2 spoon of sugar
- salt
Dumplings:
- Mascarpone cheese (creamy about 450 grams)
- 1 egg
- 2 spoons of flour
- 2 spoons of brown sugar
- 2 spoons of vanilla sugar
- Vanilla yogurt
- Raisins, peanut
Fruit Cocktail:
- Vanilla yogurt (300 ml)
- 2 tsp blueberries
- 2 tsp strawberries
- Vanilla sugar
Directions
To prepare the cakes:
Peel and shred the eggplant. Add 2 eggs, the flour, sugar and a pinch of salt. Combine all the ingredients. Heat a non-stick skillet and pour spoonfuls of the eggplant mix to create the cakes. Cook for a few minutes, flip over and cook the other side until golden brown. Set aside and decorate with blueberries and strawberries.
To prepare the dumplings:
In a large bowl add the mascarpone cheese and beat for a couple of minutes. Add the egg, flour, brown sugar, vanilla, raisins and peanuts. Beat well everything together until you get a smooth mixture. Pour spoonfuls of the mix in a pot with boiling water. Cook for a few minutes. Remove the dumplings and drain them. Place in a large plate and cover with the Vanilla yogurt. Decorate with strawberries and blueberries.
To prepare the fruit cocktail:
Combine all the ingredients in a blender until smooth.
Serve all dishes together and enjoy. Smacznego!
