SHRIMP SOUP
- 3 cups vegetable broth
- 2 cups chopped spinach
- 8 to 10 large tiger shrimps
- 1 egg white
- 2 garlic cloves
- 1 or 2 small shallots
- 1 carrot
- 1/2 cup sliced mushrooms
- 1/4 cup of butter
- Five Chinese spices
- Soy sauce
- Oil
- Salt
- Pepper
Directions
Chop the garlic cloves and shallots very finely. In a deep pan melt the butter and add these 2 ingredients. Fry at low to medium heat for a few minutes, until tender. Add the mushrooms and fry for another couple of minutes. Add the broth and let everything simmer for a few more minutes. Add 1 tsp of five Chinese spices, 3 tsp of soy sauce, 1 tsp oil and mix well. Add the spinach and the shrimps (shrimps should be thawed, cleaned and peeled). Mix everything well and bring to a boil. Let it simmer for a few minutes until the shrimp is cooked. Add 1 egg white, salt & pepper to taste, mix well and enjoy. This soup can be accompanied with a fresh carrot and apple juice. Smacznego!
