APRICOT - TAPIOCA
- 2 large eggs
- 1 can of apricot halves with heavy syrup
- 1 cup raspberries
- 3 tablespoons quick – cooking tapioca
- 1/4 cup of sugar
- 1 cup of milk
- 1/2 teaspoon of vanilla extract
Directions
Put two egg yolks in a bowl and beat. Add the can of apricot halves into a separate bowl and drain out syrup.
Turn on the stove and in a separate pot pour one cup of milk. Add the beaten yolks into the pot with milk. Pour some of the apricot syrup and add 3 spoons of sugar and stir. Then add 3 tablespoons of cooking tapioca (keep stirring).
In a separate bowl, add 3 spoons of sugar into the egg whites. Add a small amount of vanilla extract (1/2 teaspoon). Mix with a hand mixer for a couple of minutes and pour the pot mix into the bowl with eggs. Mix well and then pour onto a glass halfway. Add raspberries and apricots.
Fill the cup with the mix to the top. Enjoy Smacznego!
