BLUBERRY TART

OMNICRUST

  • 1/4 Cup Flour
  • 1/4 Cup Sugar
  • 1/4 Tsp. Salt
  • 8 Tbsp. Cold Butter
  • 1 Egg Yolk

Directions

In a large bowl, mix the flour with the sugar and the salt. Then add the butter one tbsp at a time and, using a fork, incorporate with the flour mix. Add the egg yolk and fold everything until you get the dough. Use your hands if needed. Place the dough over a floured surface and, with a rolling pin, extend and form a circle. Place on a greased pie pan, shape accordingly and prick the bottom with a fork. Bake at 400 degrees for 15 to-20 minutes. Set aside and let it cool down.

FILLING

  • 1 Tbsp. Lemon Juice
  • 1/2 Cup Sugar
  • 1/4 Tbsp. Cinnamon
  • 8 Cups Blueberries
  • 2 1/2 Tbsp. Gelatin
  • 3 Tbsp. Water
  • 2 Tbsp. Vanilla Extract

In a large pot, over medium heat, add 4 cups of the blueberries. Then add the lemon juice, sugar, cinnamon, a pinch of salt and the vanilla. Cook the blueberries for about 5 minutes mixing constantly in a gentle manner.

Meantime, mix the gelatin with the water until it is perfectly dissolved. Remove the blueberries from the heat and add the gelatin. Mix everything well. Pour the cooked berries over the other 4 cups of fresh blueberries and mix everything well. Pour the mix over the pie shell and decorate with whipped cream.

ICE-CREAM WITH FRUITS

  • 1 Small Cup of Vanilla Ice-Cream
  • 2 Peaches sliced
  • 2 Tbsp of Brown Sugar
  • 1/2 cup of Butter
  • Liqueur (Grand Marnier or Rum)

In a large pan, over medium heat, melt the butter and add the brown sugar. Mix and let the sugar cook to create caramel, but without burning it. Add the peaches, mix and let them cook for a couple of minutes. Add a shot of your preferred liqueur and flame the peaches. Make sure to follow all the fire safety guidelines when doing so. Once the flame has disappeared, set aside.

In a small bowl, serve the vanilla ice cream and pour the peaches over it. Decorate with whipped cream.
