QUICHE
Ingredients
- 2 pie shells (deep ones for apple pie)
- 2 bags of spinach
- 1/8 cup of water
- 8 eggs
- 1/2 lb shredded mozzarella
- 1/2 chopped onion
- 1/2lb mushroom
- 1 chopped kielbasa
- 1 carrot sliced
- 1/4 cup olive oil
- salt
- pepper
Directions
Pre-heat oven at 350 degrees Fahrenheit. Prick the bottom of the pie shells and bake for about 10 minutes. Remove from the oven and set aside.
In a deep pot over medium heat, add the water and then the 2 bags of spinach. Cover and let it simmer for a few minutes until the spinach is tender. Remove the spinach form the pot and drain to remove excess water. Set aside.
In a large frying pan add the oil and let it heat without burning. Add the onion and cook for a couple of minutes. Add the kielbasa and cook for another couple of minutes. Add the mushrooms and cook for another few minutes until they become soft. Add the carrots and cook for a few minutes more.
In the mean time, beat the eggs adding salt & pepper to taste.
Remove the veggies from the heat and add the spinach to the mix. Add the cheese and fold everything together. Add the eggs and mix well. Pour over the pie shells. Place in the oven for about 35 to 40 minutes and bake until the egg is completely cooked or until a knife in the center comes out clean. Let it cool for about 10 minutes and serve. Smacznego!
